So, I have a bunch of ESPixelStick V3 boards that I been using with Vixen 3 for awhile now, but I want to expand my show and was thinking of going with FPP. I was wondering if a "converter board" could be used between the ESP32 and the ESPixelStick. If not, what PixelStick like hardware are folks using for the ESP32 and ESPixelStick V4 software to be used with FPP?

You dont need anything. V4 SW runs on the D1 mini that comes with the V3 hardware. Just flash the new image and have fun. I have adapted the QuinLed ESP32 from the dig-uno/dig-quad. the flash tool has images for both of these configurations. Look for the espsv3 platform builds.
